OUR PROCESS

From a Wisconsin pasture to your stove.

FARM → RENDER → JAR

The farms.

01

The farms.

We partner with family farms in Wisconsin that raise cattle on pasture from birth to harvest — regenerative practices, no feedlots. We name our standards because everyone claims "quality": 100% grass-fed AND grass-finished. Suet only. USDA inspected. Farmers paid fairly.

The render.

02

The render.

Small batches. Heat and time. No hexane, no bleach, no deodorizer. Slower and more expensive. Worth it.

The jar.

03

The jar.

Glass, 14 ounces, wide enough to scoop. From a Wisconsin pasture to your stove with nothing added along the way.

The render

Made the way it was before 1911.

Every batch is rendered by hand, low-and-slow, at a USDA-inspected facility. No chemical solvents. No bleaching. No deodorizing. Just heat, time, and a fine strainer — the exact process that produced the cooking fat humans cooked with for 200,000 years before industrial refining showed up.

THE PERSON BEHIND IT

The process exists because a cook demanded it.

TALO is rendered this way because its founder cooks with it every night — and wouldn't ship anything he had to explain away.
