Beef Tallow vs. Seed Oils: What's Actually Different
You've probably noticed the seed oil argument is everywhere right now, and most of it is people yelling. Here's the version without the yelling: how each fat is actually made, what happens when you heat it, and what we are and aren't claiming. You can decide the rest.
How a bottle of seed oil is made
Take canola as the standard example, since it's in most pantries and most restaurant fryers.
The seeds are crushed, then washed with a solvent — usually hexane — to pull out the last of the oil. The crude oil is then degummed, refined with sodium hydroxide, bleached with filtering clays to strip the color, and deodorized with high-heat steam to strip the smell. That's not a scare story; it's the standard process, described in any food-science textbook and on the equipment manufacturers' own websites. It exists because the raw oil doesn't look, smell, or keep well enough to sell without it.
None of that makes the bottle poison. It does make it a factory product with a long story behind a short label.
How tallow is made
Suet goes into a kettle. Heat melts it. A strainer catches what isn't fat. It cools and sets.
That's the entire process. It was done over fires for thousands of years and in farmhouse kitchens until about two generations ago. We do it in small batches, USDA inspected, and the only thing that ever touches the fat is heat, time, and a strainer. One ingredient in, one ingredient out.
What happens in a hot pan
Fats are chains of fatty acids, and the type of chain decides how a fat behaves under heat.
Seed oils are mostly polyunsaturated fat. Polyunsaturated chains have multiple weak points, and heat, light, and air attack them there — that's what "oxidation" means. It's why the bottle tells you to store it away from light, and why oil that's been in a fryer too long smells the way it does.
Tallow is mostly saturated and monounsaturated fat. Fewer weak points, so it holds together at temperatures that stress fragile oils. TALO's smoke point is 420°F — hot enough to sear a steak properly, deep-fry, or roast at full blast without the fat breaking down in the pan.
This is chemistry you can observe in your own kitchen, not a claim you have to take on faith.
The label test
Here's the fastest version of this whole debate. Go pick up the bottle you cook with and count the ingredients — and while you're there, count the process steps the label doesn't mention.
Then count ours: beef tallow. Done.
What we're not saying
We're not doctors and this isn't a health blog. You'll find no claims here about what tallow cures, prevents, or fixes in your body — anyone selling fat that way is selling too hard. Our case is narrower and easier to check: one ingredient, a traditional process, stability at high heat, and food that tastes better. That's it.
The bottom line
If a fat needs a solvent bath, a bleaching step, and a deodorizer before you'd willingly cook with it, that tells you something. We'd rather cook with the fat that needs a strainer.
