Wait — is cooking with beef fat actually healthy?
We're not going to hand you a doctor's note. What we'll tell you is what humans cooked with for the last several thousand years: rendered animal fat. Beef tallow is a single-ingredient, high-smoke-point cooking fat that doesn't need chemical processing to be shelf-stable. It's the same fat McDonald's used to make its french fries until 1990. Whether it fits into your family's diet is your call — but the label makes it easy to evaluate: one word.
What actually makes TALO different from the cheap tallow at the butcher?
Two things, mostly. First, the beef — TALO is from 100% grass-fed AND grass-finished cattle raised on family farms in the upper Midwest. Most cheap tallow is from grain-finished feedlot cattle, which produces a different fat. Second, the render — ours is done low-and-slow at a USDA-certified facility in Wisconsin with no chemical solvents, no bleaching, no deodorizing. Then it's strained and packed in a glass jar (no plastic touching your food fat). It's a different product than what you'll find loose in a butcher's freezer.
Will it smell weird? I tried tallow once and the jar smelled like a barn.
That's the #1 complaint about other brands, and it's real. Bad tallow smells very beefy because it's rendered from trimmings — the fat off the meat of the cow — instead of suet. TALO is rendered exclusively from suet, a large single piece of fat from the cow, which has a neutral, savory tone and none of the overwhelming beef flavor. What do I actually cook with it?

From there: sear steak and burgers, roast potatoes and vegetables on a sheet pan, sauté anything, deep-fry twice-cooked fries the 1990 way, even pop popcorn in it. The rule of thumb: anywhere you'd use butter or oil, use TALO 1:1.
Is it kid-friendly? Can I use it to make baby food?
Lots of moms in our community do — they cook their kids' eggs and vegetables in it as a clean fat source, and some puree a small amount into homemade baby food.
